A knife is any cutting edge or blade, handheld or otherwise, with or without a handle. Knives were used at least two-and-a-half million years ago, as evidenced by the Oldowan tools. Originally made of rock, flint, and obsidian; knives have evolved in construction as technology has with blades being made from bronze, copper, iron, steel, ceramics, and titanium. Every culture has a unique version of the knife. A knife may be either a fixed-blade or a folding version with blade patterns and styles as varied as their makers and countries of origin. Due to its role as mankind's first tool, certain cultures have attached spiritual and religious significance to the knife.

When I first started getting into Japanese kitchen . knives. I was very interested in carbon . knives. and how they did or didn't react to specific foods. I didn't want to taste steel on fresh fruit, know what I mean? Yuck! ...

A. Wusthof is an expensive choice, but they do seem to work. Henckel's is a good brand, although they are quite expensive most of the time. Chicago Cutlery is another good alternative, especially if you can locate some of the cheaper models. Kitchen Aid knives are readily available, a bargain, and work for the average home chef. I personally have used and own Chicago Cutlery and Kitchen Aid knives and have found that they are economical, easy to use, worthwhile, and durable. But what we think on Yahoo! isn't really the issue. Whatever, knife you end up purchasing, it should feel balanced and comfortable in your hand. It should also not be too large or worse, too small, lest you bump your knuckles on the countertop.. You should also get… [cont.]

how do you get rust off your cutting knives?

A. If you don't want to wiggle your knives in dirt (or sand, which is even better), try using --carefully!-- some '000' steel wool, rinse off the crud, then apply a light coating of your cooking oil, which you wipe off before using the knife...wipe the cleaned knife dry after using it, apply oil, etc. Congrats! People are often confused when they see in some good knife stores "Guaranteed to Rust!" on a knife display: that means that the knives are made of High Carbon Steel, which holds a better edge than stainless steel blades and is easier to sharpen (in my experience).

I am a chef and will be going to work in a Glatt Kosher place. Do I need to get new knives & tools?
Q. After 29 years as a chef I have all my own knives and other tools. I understand that in a kosher kitchen, guidelines over utensils are very strict. Would it work if I simply keep the knives I have clean and sanitary (as usual) or should I be ready to fork out a ton of $$$ for new ones?

A. There are cleaning and purifying procedures to avoid this, don't accept the "throw them away automatically". If in doubt, call an orthodox Rabbi and tell him you cannot afford to buy all new stuff, what to do?
